Thai Chicken Peanut Salad

Ingredients


  • 1 c purple cabbage
  • 1 c shredded carrots
  • 1 c spinach
  • 1 c red peppers
  • 1/2 c edamame
  • 1/2 cilantro
  • 8 oz rice noodles
  • 1 lb cooked chicken
  • Dressing:
  • 1/2 c peanut butter
  • 2 tsp siracha
  • 1/4 c coconut aminos
  • 3 Tbsp rice vinegar
  • 1/4 c water
  • 1 Tbsp maple syrup
  • 1 Tbsp sesame oil
  • 1 tsp garlic
  • 1 tsp ginger

Instructions


  • Mix all dressing ingredients together and set aside.
  • Add all salad ingredients to a large bowl and mix well.
  • Stir dressing and pour over salad. Toss to cover evenly.
