Chinese Chicken Salad

Ingredients


  • 2 c cooked chicken
  • 4 c romaine lettuce
  • 1 c shredded red cabbage
  • 1 c shredded carrots
  • 1/2 c sliced almonds
  • 2 pitted medjool dates, chopped
  • 2 green onions, chopped
  • 1/2 c canned mandarin oranges
  • Dressing:
  • 2 pitted medjool dates
  • 3 Tbsp coconut aminos
  • 3 Tbsp rice vinegar
  • 2 Tbsp extra virgin olive oil
  • 1 garlic clove, peeled (or 1/2 tsp minced garlic)
  • 1/2 inch ginger root
  • 1/2 tsp pepper
  • 1/4 tsp sea salt

Instructions


  • Blend all dressing ingredients and set aside.
  • Add all salad ingredients to a large bowl and toss.
  • Stir dressing and pour over salad. Mix well to distribute dressing evenly.
